We don't use AI. Sure, it would be easy to send each receipt message to a remote AI server and have it do all the work for us. And it would probably get us superior results right out of the box, with no programming required on our part. Honestly, it's a pretty tempting alternative. Call us paranoid, but from where we sit, nothing that gets observed seems to go uncollected for possibly nefarious purposes, so we avoid the possibility by doing 100% of the processing on our own servers.
